Ingredients
For the crust:
- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ cup unsalted butter, softened
- ¼ tsp salt
For the filling:
- 1 cup granulated sugar
- 2 tbsp all-purpose flour
- 3 large eggs
- 1 tbsp lemon zest
- 1/3 cup fresh lemon juice
- 1 tbsp dried lavender
- 1 tbsp unsalted butter, melted
- Pinch of salt
For garnish:
- Fresh lavender (optional)
- Powdered sugar for dusting
Instructions
1️⃣ Preheat the oven: Set your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
2️⃣ Make the crust: In a medium bowl, mix the flour, powdered sugar, and salt. Add the softened butter and stir until the dough comes together. Press the mixture evenly into the bottom of the prepared pan.
3️⃣ Bake the crust: Bake for about 15-18 minutes, or until the crust is lightly golden. Remove from the oven and set aside to cool while you prepare the filling.
4️⃣ Prepare the filling: In a separate bowl, whisk together the sugar, flour, eggs, lemon zest, lemon juice, and a pinch of salt. Stir in the melted butter and dried lavender.
5️⃣ Bake the lemon bars: Pour the filling over the cooled crust. Bake for an additional 20-25 minutes, or until the filling is set and slightly golden around the edges.
6️⃣ Cool and garnish: Let the bars cool completely in the pan. Once cooled, dust with powdered sugar and garnish with fresh lavender (if desired).
7️⃣ Serve: Cut the bars into squares and enjoy the refreshing and floral flavor of lavender and lemon!
