Ingredients
- 1 lb ground beef
- 1 cup long-grain white rice, uncooked
- 1 can (10.5 oz) French onion soup
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 cup shredded cheese (optional – Swiss, mozzarella, or cheddar)
- Fresh parsley, for garnish (optional)
Instructions
1️⃣ Preheat the oven:
Preheat to 350°F (175°C). Get your 9×13-inch baking dish ready by greasing it lightly.
2️⃣ Sauté the aromatics:
In a skillet over medium heat, heat olive oil. Add sliced onion and cook for 5–6 minutes until softened and golden.
Add garlic and sauté for another 30 seconds. Remove from the pan and set aside.
3️⃣ Brown the beef:
In the same skillet, cook the ground beef until browned and cooked through. Drain excess fat. Season with salt and pepper to taste.
4️⃣ Mix everything:
In the prepared baking dish, combine:

Sautéed onion and garlic
Mix well until evenly combined.
5️⃣ Bake:
Cover tightly with foil and bake for 60–70 minutes, or until rice is tender and liquid is absorbed. Stir halfway through if needed.
6️⃣ Add cheese (optional):
Remove foil during the last 5–10 minutes. Sprinkle shredded cheese over the top and return to oven until melted and bubbly.
7️⃣ Rest and serve:
Let it sit for 5 minutes. Garnish with chopped parsley if desired. Serve hot and enjoy!

Creamy Option: Add ½ cup sour cream or cream of mushroom soup for a richer texture.
Rice Tip: Stick with uncooked long-grain rice. Instant rice cooks too quickly and can get mushy.
