Instructions

1️⃣ Prepare the crust:

  • Preheat your oven to 350°F (175°C).

  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.

  • Press the mixture into the bottom and up the sides of a 9-inch pie pan.

  • Bake for 10 minutes, then remove from the oven and set aside to cool.

2️⃣ Make the filling:

  • In a medium saucepan, combine the brown sugar, flour, and salt.

  • Gradually whisk in the milk, ensuring there are no lumps.

  • Cook the mixture over medium heat, stirring constantly, until it comes to a simmer and thickens, about 5-7 minutes.

3️⃣ Temper the egg yolks:

  • In a separate bowl, beat the egg yolks.

  • Slowly pour a small amount of the hot milk mixture into the yolks while whisking constantly to prevent curdling.

  • Gradually whisk the egg yolk mixture back into the saucepan with the rest of the milk mixture.

4️⃣ Finish the filling:

  • Continue to cook the mixture for another 2-3 minutes until it thickens further.

  • Remove from heat and stir in the vanilla extract and butter until smooth.

5️⃣ Assemble the pie:

  • Pour the butterscotch filling into the prepared graham cracker crust.
