This rich and creamy Butterscotch Pie, inspired by Dolly Parton’s recipe, is the perfect dessert to satisfy your sweet tooth. With a buttery graham cracker crust, a silky butterscotch filling, and a fluffy whipped cream topping, it’s a true Southern favorite!
Ingredients
For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the butterscotch filling:
- 1 cup light brown sugar, packed
- 3 tbsp all-purpose flour
- ¼ tsp salt
- 2 cups whole milk
- 3 large egg yolks, beaten
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
For the topping:
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
1️⃣ Prepare the crust:
-
Preheat your oven to 350°F (175°C).
-
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.
-
Press the mixture into the bottom and up the sides of a 9-inch pie pan.
-
Bake for 10 minutes, then remove from the oven and set aside to cool.
2️⃣ Make the filling:
-
In a medium saucepan, combine the brown sugar, flour, and salt.
-
Gradually whisk in the milk, ensuring there are no lumps.
-
Cook the mixture over medium heat, stirring constantly, until it comes to a simmer and thickens, about 5-7 minutes.
3️⃣ Temper the egg yolks:
-
In a separate bowl, beat the egg yolks.
-
Slowly pour a small amount of the hot milk mixture into the yolks while whisking constantly to prevent curdling.
-
Gradually whisk the egg yolk mixture back into the saucepan with the rest of the milk mixture.
4️⃣ Finish the filling:
-
Continue to cook the mixture for another 2-3 minutes until it thickens further.
-
Remove from heat and stir in the vanilla extract and butter until smooth.
5️⃣ Assemble the pie:
-
Pour the butterscotch filling into the prepared graham cracker crust.
-
Smooth the top with a spatula and refrigerate for at least 4 hours, or until fully set.
6️⃣ Make the whipped topping:
-
In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
-
Spread the whipped cream on top of the chilled pie.
7️⃣ Serve:
-
Slice and serve chilled for a delicious treat!
