These high-protein, creamy egg bites are perfect for meal prep, a quick breakfast, or a healthy snack! Packed with cheese, veggies, and optional turkey bacon, they’re nutritious, flavorful, and easy to make.


Ingredients

6 large eggs
½ cup cottage cheese
¼ cup shredded cheddar cheese (or your favorite cheese)
¼ cup diced bell peppers
¼ cup diced spinach or kale
¼ tsp garlic powder
¼ tsp black pepper
¼ tsp salt
½ cup cooked and crumbled turkey bacon or chicken sausage (optional)


Instructions

1️⃣ Preheat the oven:

  • Set oven to 350°F (175°C).
  • Grease a 12-cup muffin tin or use silicone liners.

2️⃣ Blend the egg mixture:

  • In a blender, mix eggs, cottage cheese, shredded cheese, garlic powder, salt, and black pepper until smooth.

3️⃣ Add veggies & protein:

  • Divide the bell peppers, spinach, and turkey bacon (if using) evenly into each muffin cup.

4️⃣ Pour the egg mixture:

  • Fill each muffin cup about ¾ full with the blended egg mixture.

5️⃣ Bake:

  • Bake for 18-22 minutes, or until the egg bites are set and slightly golden on top.

6️⃣ Cool & Serve:

  • Let them cool for a few minutes before removing from the tin.
  • Enjoy warm or store in the fridge for up to 4 days!

7️⃣ Reheat & Enjoy:
