For the stroganoff:
- 1 lb (450g) beef tenderloin or sirloin, thinly sliced
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz (225g) cremini or button mushrooms, sliced
- 1 tsp Dijon mustard
- ½ cup beef broth
- ½ cup heavy cream
- ½ cup sour cream
- 1 tsp Worcestershire sauce
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ½ tsp smoked paprika
- 1 tbsp chopped fresh parsley
For serving:
- 8 oz egg noodles or mashed potatoes
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over high heat. Add the thinly sliced beef in a single layer and sear for 1-2 minutes per side until browned. Remove from the pan and set aside.
- Reduce the heat to medium and add the remaining olive oil and butter. Sauté the onions for 2-3 minutes until soft, then add the garlic and mushrooms. Cook for about 5 minutes until the mushrooms are tender and golden brown.
- Stir in the Dijon mustard, smoked paprika, and Worcestershire sauce. Mix well.
- Pour in the beef broth and let it simmer for 2-3 minutes, scraping up any browned bits from the pan.
- Lower the heat and stir in the heavy cream and sour cream, mixing until smooth. Let the sauce simmer for another 3-4 minutes.
- Return the seared beef to the pan and stir to coat it in the creamy sauce. Simmer for 2 more minutes until heated through. Adjust seasoning with salt and black pepper if needed.
- Garnish with fresh parsley and serve over egg noodles or mashed potatoes. Enjoy!
