For the stroganoff:

  • 1 lb (450g) beef tenderloin or sirloin, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 1 tsp Dijon mustard
  • ½ cup beef broth
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 tsp Worcestershire sauce
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ tsp smoked paprika
  • 1 tbsp chopped fresh parsley

For serving:

  • 8 oz egg noodles or mashed potatoes

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over high heat. Add the thinly sliced beef in a single layer and sear for 1-2 minutes per side until browned. Remove from the pan and set aside.
  • Reduce the heat to medium and add the remaining olive oil and butter. Sauté the onions for 2-3 minutes until soft, then add the garlic and mushrooms. Cook for about 5 minutes until the mushrooms are tender and golden brown.
  • Stir in the Dijon mustard, smoked paprika, and Worcestershire sauce. Mix well.
  • Pour in the beef broth and let it simmer for 2-3 minutes, scraping up any browned bits from the pan.
  • Lower the heat and stir in the heavy cream and sour cream, mixing until smooth. Let the sauce simmer for another 3-4 minutes.
  • Return the seared beef to the pan and stir to coat it in the creamy sauce. Simmer for 2 more minutes until heated through. Adjust seasoning with salt and black pepper if needed.
  • Garnish with fresh parsley and serve over egg noodles or mashed potatoes. Enjoy!

Notes

For the best texture, use high-quality beef and sear it quickly over high heat to avoid overcooking. Adding a splash of brandy or white wine to deglaze the pan enhances the flavor. Serve immediately for the creamiest consistency.
